Homemade 3 Beans

Canned baked beans are delicious, but I am a little biased and think that homemade beans taste a lot better! Not to mention they are lower in salt and sugar. These homemade 3 beans can be cooked in bulk by doubling the recipe to have on hand for a speedy midweek meal. These beans are great on toast, in a jacket potato, nacho bowl, served with rice or cous cous and veggies or paired with salad and bread.
You can mix and match the beans you use depending on what you like or have available in your pantry.
Homemade 3 Beans
Serves 6
Ingredients

2 cloves garlic, crushed

1 small red onion, diced

2 tsp olive oil

1 can (400g) of chickpeas, canellini beans and butter beans all rinsed and drained

1 1/2 tins (400g) of diced tomato

1/2 cup water
-
2 tbs tomato paste

2 tsp sweet paprika

1 tsp cumin
-
1 1/2 tsp balsamic vinegar

Salt, pepper & chilli flakes to taste .
Method

Fry onion and garlic in olive oil over medium heat in a large pot or fry pan for about 2 minutes until soft

Add remaining ingredients and stir to combine (add chilli flakes here)

Turn heat to low and simmer for about 10 minutes allowing all the flavours to absorb
