Bacon & Orange Sprouts

Say good-bye to smelly and boring brussels sprouts. Roasting them brings out such a nice flavour and when paired with bacon and orange this dish will be a star of the meal! If you are vegetarian or vegan you can swap the bacon for chestnuts.
Note: If you are preparing this to take to a gathering, keep the dressing in the jar and dress once ready to serve
Bacon & Orange Sprouts
Serves 4
Ingredients

20 brussels sprouts, washed, stem removed and sliced in half length-ways

2 tbs olive oil

Pinch of salt

1 rasher bacon, diced (or 10 chestnuts if vegetarian or vegan)

Juice from 1/2 orange

1/2 tbs apple cider vinegar

1 tsp dijon mustard

1 tbs orange zest
Method

Pre-heat oven to 180⁰c and line a baking tray with baking paper

Place brussels in a small mixing bowl and toss with 1 tbs oil and salt

Place on baking tray leaves side up and roast for 12 minutes, set aside when cooked

While brussels are roasting, cook bacon in a small non-stick fry pan over medium-high heat until browned. Set aside

Make dressing by adding juice, vinegar, mustard, 1 tbs orange zest and 1 tbs oil in a jar. Shake to combine

Place brussels on a serving platter, top with bacon, dressing and remaining orange zest
