Choc Swirl Cake
November, 2018
I try as much as possible to make my own snacks as I know exactly what ingredients are in them, and I can tweak the recipe to reduce added sugars and saturated fats.
This cake is great to take to a picnic or to slice after cooking for a snack during the week. I usually keep the slices in the freezer and pull them out as needed.
Choc Swirl Cake
10-12 slices
Ingredients
-
1 1/2 cups plain flour
-
2 tsp baking powder
-
1/2 cup rolled oats
-
1/2 cup walnuts, chopped
-
2 ripe bananas, mashed
-
1/3 cup of maple syrup
-
1/3 cup milk
-
1/2 cup yoghurt
-
2 eggs
-
1/3 cup canola oil
-
1 tsp vanilla essence
-
1/3 cup cacoa powder
Method
-
Pre-heat oven to 180°c
-
Mix plain flour, baking powder, rolled oats & walnuts in one bowl
-
In another bowl add banana and mix with remaining ingredients
-
Make a well in the dry mix and add wet ingredients, mix to combine
-
Pour in to a lined rectangular loaf dish and sprinkle the cacao on top. Using a butter knife swirl into batter (not too much otherwise this mixes it)
-
Cook for about 40 minutes or until skewer comes out clean when inserted in middle of the cake
