Choc Swirl Cake

I try as much as possible to make my own snacks as I know exactly what ingredients are in them, and I can tweak the recipe to reduce added sugars and saturated fats.

 

This cake is great to take to a picnic or to slice after cooking for a snack during the week. I usually keep the slices in the freezer and pull them out as needed. 

Choc Swirl Cake

10-12 slices

Ingredients

  • 1 1/2 cups plain flour

  • 2 tsp baking powder

  • 1/2 cup rolled oats

  • 1/2 cup walnuts, chopped

  • 2 ripe bananas, mashed 

  • 1/3 cup of maple syrup

  • 1/3 cup milk

  • 1/2 cup yoghurt

  • 2 eggs

  • 1/3 cup canola oil

  • 1 tsp vanilla essence

  • 1/3 cup cacoa powder 

Method

  1. Pre-heat oven to 180°c

  2. Mix plain flour, baking powder, rolled oats & walnuts in one bowl

  3. In another bowl add banana and mix with remaining ingredients

  4. Make a well in the dry mix and add wet ingredients, mix to combine

  5. Pour in to a lined rectangular loaf dish and sprinkle the cacao on top. Using a butter knife swirl into batter (not too much otherwise this mixes it)

  6. Cook for about 40 minutes or until skewer comes out clean when inserted in middle of  the cake
