Easy Peasy Green Falafel

As the title says, these are really easy to make with the help of a food processor. These make a nice snack served with hummus or you can add them to your favourite salad.
Easy Peasy Green Falafel
Makes 10
Ingredients

400g chickpeas, drained and rinsed

1/2 cup blanched peas

1 garlic clove
-
1 tsp cumin
-
2 tbs tahini
-
2 handfuls baby spinach (about 20g)

Juice from 1/2 lemon
-
1/2 tsp salt
-
1/4 tsp chilli flakes

1/2 cup bread crumbs
-
2 tsp sesame seeds
-
4 tbs olive oil
Method

Pre-heat oven to 180⁰c and line 1 baking tray with baking paper

In a mixing bowl or food processor add chickpeas, peas, garlic, cumin, tahini, spinach, lemon juice, salt and chilli flakes

Blend in the food processor or with a stick blender until combined

Stir through bread crumbs and sesame seeds

Heat a large fry pan with 2 tbs olive oil over medium-high heat

Roll 5 tablespoons mixture into balls and place in the pan. Flatten slightly with the back of a spatula and cook on each side until slightly brown

Remove and place on baking tray

Repeat step 6-7 with remaining mixture

Cook in the oven for 10 minutes to finish cooking
