Halloween Stuffed Peppers

These are a fun meal to make at Halloween (or any time of year - just without the cute faces).
You can experiment with ingredients to suit your taste buds. Here are my suggestions:
Swapping the lentils for 250g of cooked minced meat (turkey, chicken, beef etc).
Swapping the feta for cheddar cheese
Mixing through 2 tbs tomato paste and/or 1/2 can chopped tomatoes in the pan after cooking the onion and garlic for a tomato twist
Using pine nuts or another nut instead of almonds
Halloween Stuffed Peppers
Makes 4
Ingredients
4 large peppers of different colours
2-3 tbs extra virgin olive oil
1 red onion, finely chopped
2 garlic cloves, crushed
1 can brown lentils (400g)
250g bag microwave rice or mixed grains
50g chopped almonds
30g flat leaf parsley, finely chopped
120g feta cheese
Pepper and salt to taste
Method
Preheat oven to 200°c
Cut the tops off the peppers (the lid) and remove any seeds from inside
Using a sharp knife (carefully) carve a face into the peppers
Place peppers on a baking tray (leave the lids to the side) lined with baking paper and drizzle 1-2 tbs oil. Use your hands to rub the oil all over both sides of the peppers. Bake for 10-15 minutes
While the peppers cook, prepare the filling by heating the remaining oil in a medium fry pan and sauté the onion and garlic over medium heat for 5 minutes or until brown
Stir in the lentils, rice, nuts and herbs and take off the heat
Spoon the mixture into the peppers and crumble the feta cheese on top. Return to the oven with the lids for a further 10 minutes
Serve with a side of homemade sweet potato wedges
