Hi Fibre Cherry Muffins

These muffins are my absolute favourite! I have been making them for over 10 years! They were a staple in my lunch box through out high school and I would take them to Netball carnivals to snack on between games. 

 

The addition of bran and wholemeal flour bumps up the fibre content to help keep you full and support your gut health. 

Hi Fibre Cherry Muffins

Makes 12

Ingredients

  • 1 egg

  • 1/2 cup canola oil

  • 1 cup Greek yoghurt

  • 1 1/4 cups All Bran

  • 1 1/2 cups wholemeal self-raising flour

  • 1/2 cup brown sugar

  • 2 tsp cinnamon

  • 1 tsp vanilla essence

  • Pinch of salt

  • 1 1/4 cup pitted cherries (or any berry). I use jar pitted cherries for convenience. 

Tip: if you don't have All Bran you can substitute this with rolled oats

Method

  1. Pre-heat oven to 180°c

  2. In a bowl add egg, oil, yoghurt and All Bran. Mix to combine

  3. Then add all remaining ingredients except cherries and combine (important not to over mix)

  4. Fold through cherries

  5. Pour into a 12-hole muffin pan (you can line with baking paper or patty pans)

  6. Cook for 20 minutes or until golden brown
