Mi-So-Good Salmon Bake
January, 2020
Miso and salmon make a perfect pair. This is a simple dish I usually throw together on a weeknight as it requires minimal preparation and takes less than 30 minutes to come together.
Mi-So-Good Salmon Bake

1/2 tbs extra virgin olive oil

1 tbs miso paste
-
1/2 tsp honey

200g broccolini, trimmed

Additional vegetables (not pictured) e.g. 200g cauliflower, green beans or asparagus
Method

Pre-heat oven to 180°c and line a large baking tray with baking paper
-
Place baby potatoes in a microwave safe bowl with 1/4 cup water and microwave on high for 5 minutes
-
Drain water and transfer potato to the baking tray

Softly flatten by pressing on the potato with the bottom of a glass or mug, so that the skin splits

While potato is cooking, mix the miso, soy sauce and honey in a small bowl. Add salmon and cover in the marinade
-

Arrange vegetables on the tray around the salmon
