Mi-So-Good Salmon Bake

Miso and salmon make a perfect pair. This is a simple dish I usually throw together on a weeknight as it requires minimal preparation and takes less than 30 minutes to come together. 

Mi-So-Good Salmon Bake

Serves 2

Ingredients

  • 12 baby potatoes 

  • 1/2 tbs extra virgin olive oil

  • 2 garlic cloves, peeled

  • salt and pepper

  • 2 x 120g salmon fillets

  • 1 tbs miso paste

  • 1/2 tsp honey

  • 1/2 tsp soy sauce

  • 2 tsp sesame seeds

  • 200g broccolini, trimmed

  • Additional vegetables (not pictured) e.g. 200g cauliflower, green beans or asparagus

Method

  1. Pre-heat oven to 180°c and line a large baking tray with baking paper

  2. Place baby potatoes in a microwave safe bowl with 1/4 cup water and microwave on high for 5 minutes

  3. Drain water and transfer potato to the baking tray

  4. Softly flatten by pressing on the potato with the bottom of a glass or mug, so that the skin splits

  5. Add garlic cloves, drizzle with oil and season to taste

  6. Cook for 15 minutes

  7. While potato is cooking, mix the miso, soy sauce and honey in a small bowl. Add salmon and cover in the marinade

  8. After the 15 minutes, remove potato from the oven and turn over

  9. Add salmon to tray and sprinkle sesame seeds on top

  10. Arrange vegetables on the tray around the salmon

  11. Return tray to oven and cook for a further 8 minutes

  12. Remove, divide onto plates and enjoy
