Red Pesto Crusted Salmon

A little bit different from your usual salmon, this crusted salmon turns it up a notch. This is great to serve at a dinner party with friends or family.
Red Pesto Crusted Salmon
Serves 5-6
Ingredients

Roasted Capsicum Dip (or the Basil & Spinach Pesto if you want to go green)

600g salmon fillet

1.5 tbs bread crumbs

Basil leaves for decoration
Method

Pre-heat oven to 180⁰c and line 1 baking tray with baking paper

Slice capsicum in half length-ways, removing seeds and place face-down on the baking tray

Roast for 20 mins and set aside

Once capsicum has cooled enough to handle, peel off skin

Place capsicum, cashews, garlic, basil, oil, cheese and juice in a food processor or mixing bowl

Blend (using stick blender if needed) until smooth with a few chunks

Place salmon on a baking tray and spread pesto to cover (you might have some pesto remaining - see note)

Sprinkle with bread crumbs

Cook for 30-35 minutes and serve with basil leaves
Note: Can create pesto a day in advance to save time. Use any left-over as a dip!
